  • 1 leaf Bay leaf
  • 1/2 cup chickpeas drained and rinsed
  • 2/5 pound Chicken breast cooked and shredded
  • 1 2/3 cup Chicken Stock
  • 1/4 teaspoon turmeric

Instruction:

  1. 1. In a large pot or Dutch oven, heat oil over medium-high heat and saute onion, celery, and carrots, stirring occasionally for about 5 minutes. Add mushrooms and garlic, cooking another 3 minutes. 2. Stir in the chicken stock, bay leaves, turmeric, salt and chickpeas; bringing to a boil. Mix in shredded chicken, cover and turn down heat to a simmer for about 15-20 minutes. 3. Add kale, cover and simmer an additional 5 minutes. Discard bay leaf.
