When I was a kid growing up in Philly, I would often stay overnight at my Grammys. When I woke she would give me all the bacon I could eat. ALL-the-bacon-I-could-eat!

As the oldest of 5 kids growing up in Philly, THAT was monumental! At home, I could maybe snag 3 strips… if I was lucky! I still smile at the thought of those lazy weekend mornings at my Grammys…and all of that glorious bacon. Food memories are some of my favorite memories!

This bacon jam recipe is easily the best in the world. Bacon, onions, brown sugar, coffee, and balsamic are slowly simmered until thick and jam-like. It’s simple to make and perfect for serving as an appetizer to elevate cheese and crackers.

Ingredients:

  • 1 lb thick cut bacon
  • 2 extra large sweet onions (quartered and thickly sliced)
  • ½ cup brown sugar (use coconut sugar for paleo)
  • ½ cup water
  • ⅓ cup strong brewed coffee
  • 1 tablespoon balsamic vinegar

Instruction:

  1. Cut the bacon into half-inch slices and add them to a large frying pan. Don’t worry if the bacon pieces stick together, they will come apart as they cook. Cook over medium-high heat for about 10 minutes, stirring frequently until the bacon is cooked but still quite chewy. A few crispy bits are ok. Use a slotted spoon to remove the bacon from the pan.
  2. Pour out all but 1 tablespoon of the bacon drippings. Add the onions to the pan and cook for about 8-10 minutes then reduce the heat to low. Add the sugar and stir. Continue to cook until the onions have caramelized, about 20 minutes.
  3. Add the reserved bacon, coffee, and water and increase the heat to medium. Continue to cook, stirring about every five minutes, until the onions are thick and jam-like, about 30 minutes. Remove from the heat and stir in the balsamic. Taste for seasoning and salt if necessary.
  4. Use immediately or refrigerate for up to a week. Bring back to room temperature before serving. There will be little spots of white fat when you take it out of the fridge. As the jam comes to room temperature, these will disappear.

  • 1 lb. bacon, cut into 1″ pieces
  • 1 onion, finely chopped

  • 2 pounds Bacon
  • 1 1/2 cups of chopped Vidalia onion

  1. Chop your bacon and cook until almost crisp, stirring it around often.
  2. Drain all but 1/2 TBS or so of the bacon grease out.
  3. Add in the onions and sauté for about 5 minutes.
  4. Next, add in the garlic and sauté for 1-2 minutes, stirring the whole time.
  5. Add in brown sugar, vinegars and water. Stir and bring to a simmer over medium heat.
  6. Add in Thyme sprigs and pepper and continue simmering another few minutes, stirring often, being careful not to burn.
  7. Taste and adjust seasoning to your preference if necessary.
  8. Remove Thyme sprigs and allow the mixture to cool.
  9. You can then pulse the jam a few times in your food processor for a finer jam or leave it as is. Up to you.
  10. Once completely cool, store in airtight jars in your refrigerator for up to 3 weeks.
  11. Heat it up a bit to enjoy on whatever you like. If you need to after reheating adding a TBS or so of water if the jam is too thick.
