It’s no secret that we’re buffalo chicken fans — we’ve added it to pizza, dips, stuffed shells, baked wings and chicken rice bowls. We’ve been making homemade buffalo sauce for ages. It’s simple, tastes amazing and doesn’t have any unnecessary ingredients added. Recently, we figured out that you can make a big batch of sauce and store it in the fridge for weeks. The sauce thickens in the fridge, but 10 seconds in the microwave and a good stir gets it back into shape.

Thanks to Buffalo, NY, we have buffalo sauce (hooray). There’s lots of play when making it at home, but you’re going to start with two main ingredients — butter and hot sauce. No wonder it tastes so good, right?

Melt butter over low heat — I like low since it keeps the butter creamy and there isn’t any risk of it browning. Not that brown butter is a bad thing, it’s delicious. It simply isn’t what we are looking for in our sauce.

Finally, whisk in hot sauce and garlic powder. Whisk until the sauce is smooth and red. We use Frank’s hot sauce, it’s got everything we’re looking for when a craving for buffalo wing sauce hits. That said, it would be fun to play around with other hot sauces (Crystal is popular and I’ve been wanting to try Cholula for a while, too).

Ingredients:

  • 1 cup Frank’s Hot Sauce
  • 1/2 cup butter
  • 2 Tablespoons white vinegar
  • 1/2 tablespoon worchestershire sauce
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon garlic

Instruction:

  1. In a medium saucepan add the hot sauce, butter, white vinegar, worchestershire sauce, cayenne, and garlic.
  2. Bring the mixture to a boil and then reduce to a simmer and whisk for 5-7 minutes. Remove from heat and serve.

With three ingredients and 10 minutes, this homemade buffalo sauce is simple to make. Check the notes section below for inspiration on adapting and storing it. The recipe below makes a medium-hot sauce. For a spicier version, add some cayenne pepper — start with 1/4 teaspoon, taste and go from there. For a milder version, reduce the hot sauce by 1/3 to 1/2 cup.

  • 16 tablespoons (1 cup or 8 ounces) unsalted butter
  • 2 teaspoons garlic powder
  • 1 1/3 cups hot sauce, like Frank’s or Crystal

Instruction:

  1. Melt butter in a medium pan over medium-low heat until melted. Remove pan from the heat to prevent the sauce from breaking.
  2. Whisk in the garlic powder and hot sauce until a cohesive sauce forms, about 1 minute.

Ingredients:

  • 1 1/3 cup Frank’s RedHot sauce
  • 3 tablespoons white vinegar
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 cup unsalted butter ((2 sticks) room temperature)
  • salt to taste

Instruction:

  1. Take the butter out of the fridge, unwrap and cut it into tablespoon pieces. Set aside.
  2. In a saucepan over medium-low heat, combine the hot sauce, vinegar, Worcestershire sauce, pepper, garlic powder and paprika.
  3. Allow the mixture to warm through and allow it to start to steam, but don’t let it boil. Stir it often.
  4. Once the sauce heats and starts to steam, and barely start to simmer, remove the pan from the heat.
  5. Add the butter to the hot sauce and mix quickly with a whisk to stir while the butter melts.
  6. The sauce will cool slightly as the butter melts, but it should be warm enough to completely melt the pieces of butter.
  7. Add a dash or two of salt if you’d like, to taste.
  8. Serve the warm sauce over wings, on pulled pork or as a dipping sauce.
  9. Refrigerate any leftovers. As you refrigerate the mixture, the sauce will thicken slightly (because the butter will harden again). Simply reheat the mixture in the microwave in short increments
  10. This mixture makes enough to cover 5 pounds of wings and have extra for dipping. Yields about 3 cups of sauce.
