Ingredients:

  • 8 skin-on chicken drumsticks (approx. 2 pounds total weight)
  • 3 tbsp olive oil
  • 1 Tbsp sea salt (cut back to 1 tsp if you’re not a fan of salt.)
  • ½ tsp black pepper
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp smoked or sweet paprika
  • 1 Tbsp dry mustard (optional)

Instruction:

  1. Preheat your oven to 400 degrees F. Line a baking sheet with aluminum foil or parchment paper.
  2. Add the garlic powder, onion powder, paprika, salt and black pepper to a small mixing bowl.
  3. Using a fork, blend the spices together.
  4. Add the olive oil to the spices and blend them together.
  5. Allow the chicken legs to come to room temperature.
  6. Using a pastry brush (or your hands) coat the chicken legs with the seasoning oil mixture. Make sure to coat the entire drumstick
  7. Place the chicken legs in a single layer on a foil-lined baking sheet, making sure to leave room between the drumsticks.
  8. Bake the chicken legs for 30 minutes at 400 degrees on the middle rack of your oven.
  9. Brush the legs with the oil that has gathered on the tray and bake for an additional 5-10 minutes, until crispy (cooking time may vary).

  • 6 chicken legs
  • 2 tsp paprika
  • 1.5 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp rosemary, dried
  • 1 tsp parsley flakes
  • ½ tsp ground black pepper
  • ½ tsp ground mustard
  • 1 tbs olive oil

Instruction:

  1. Preheat oven to 425°(F)
  2. Pat chicken legs dry with a paper towel and trim any excess skin
  3. Place chicken legs in a large ziptop bag and add olive oil. Close bag and shake to coat chicken well with the oil.

  3. Put the chicken legs in the oven and bake for 45 minutes. Take the chicken out of the oven, and rotate it so that the bottom that was in the sauce is now on top, out of the sauce.
  4. Put the legs back in the oven. Raise the heat to 425 degrees F., and bake until the sauce is bubbly and starts to caramelize on the chicken legs. This should take about 15 minutes.
  5. Remove the chicken from the oven, and allow to rest for 5 minutes before serving. Serve the sauce the the chicken cooked in with the meal or over rice if you’d like.
