Ingredients:

  • 8 ounces spaghetti (cooked)
  • 2 cups cooked chicken (shredded)
  • 1 onion (chopped)
  • 1 clove garlic (minced)
  • ½ green bell pepper (chopped)
  • ¼ cup butter
  • ¼ cup flour
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • ¾ cup light cream
  • ½ cup parmesan cheese (shredded)
  • 2 cups sharp cheddar cheese (shredded, divided)
  • salt and pepper
  • 14 ounces diced tomatoes (drained or tomatoes with chilis)

Instruction:

  1. Preheat oven to 375°F. Cook spaghetti al dente. Drain well.
  2. Cook onion, garlic, and bell pepper in butter until tender. Add flour and seasonings. Cook for 1-2 minutes. Stir in broth and cream a little bit at a time until smooth. Cook until thick and bubbly.
  3. Remove from heat, add parmesan cheese and half the cheddar cheese. Mix until smooth and melted. Season with salt and pepper to taste.
  4. Combine spaghetti, chicken, cream sauce, and canned tomatoes. Mix well. Spread in a greased 9×13 dish.
  5. Top with remaining cheddar cheese and bake 25-30 minutes or until hot and bubbly.

Ingredients:

  • 2 c. cooked chicken
  • 3 c. spaghetti, uncooked and broken into two-inch pieces
  • 2 cans cream of mushroom soup
  • 2 c. grated sharp cheddar cheese
  • 1/4 c. finely diced green pepper
  • 1/4 c. finely diced onion
  • 1 jar (4-ounce) diced pimentos, drained
  • 2 c. reserved chicken broth from pot
  • 1 tsp. Lawry’s Seasoned Salt
  • 1/8 tsp. (to 1/4 teaspoon) cayenne pepper
  • Salt and pepper, to taste
  • 1 c. additional grated sharp cheddar cheese

Instruction:

  1. Cook 1 cut up fryer chicken and pick out the meat to make two cups.
  2. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.
  3. Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).
