This chocolate pudding recipe takes no time at all on the stovetop, and then a quick chill while you’re eating dinner and voila! Homemade chocolate pudding can be made in advance and stored in the fridge until you’re ready to enjoy it.

Homemade chocolate pudding has to be stored in the fridge. I like to store it in serving-sized plastic containers for ease. It will last 5-7 days.

This recipe makes a pretty good amount so it’s perfect for packing in lunches. Grab some single-serving plastic containers and you have delicious chocolate pudding to send with your kids (or yourself) for the whole week.

Chocolate pudding can change texture when frozen because of the corn starch so it’s not great to defrost but it does make great drip-free pudding pops!

Ingredients:

  • 1 ⅓ cup sugar
  • ⅔ cup cocoa
  • ⅓ cup cornstarch
  • pinch salt
  • 4 ½ cups milk
  • 3-4 tablespoons butter
  • 1 teaspoon vanilla

Instruction:

  1. In a saucepan, combine sugar, cocoa powder, salt, and cornstarch. Mix well. Add in cold milk, whisk until combined.
  2. Increase heat to medium, stirring constantly until mixture reaches a boil.
  3. Allow mixture to boil for 1 minute while stirring constantly. Remove from heat and stir in butter and vanilla.
  4. Allow mixture to cool completely, stirring occasionally to avoid a skin forming on the pudding.
  5. Serve chilled or warm.

Ingredients:

  • 2 Large Egg Yolks
  • 2 tbsp. Cornstarch
  • 2 c. Whole Milk, Divided
  • 1/2 c. Sugar
  • 1/4 c. Unsweetened Cocoa Powder
  • 1/4 tsp. Salt
  • 2 tsp. Chocolate Extract (or Vanilla Extract)

Instruction:

  1. In a medium bowl, whisk the egg yolks for about 60 seconds until light yellow and increased in volume, then whisk in the cornstarch and about 1/4 cup of the milk. Once smooth and incorporated, set aside.
  2. Place the sugar, cocoa, salt, and remaining milk in a saucepan, and bring to a scald over medium-high heat, which is when the liquid is about 180-190ºF. This is before the mixture comes to a boil, and in this stage you will see little bubbles start forming on the sides of the pan. Remove the pan from the heat and, while whisking constantly, dribble the hot cocoa into the egg cornstarch mixture very gradually. We are tempering so we don’t scramble the eggs. Pour everything back into the saucepan and cook over medium high heat, whisking constantly, until the pudding comes to a full boil. Reduce the heat to a simmer and continue whisking for a couple minutes until the pudding is thickened.
  3. Remove the pudding from the heat and stir in the chocolate or vanilla extract. Pour the pudding into a bowl and press plastic wrap directly on the surface of the pudding so a skin doesn’t form. Refrigerate for an hour or two until chilled. Serve and enjoy!
