Garlic noodles is my favorite noodles all these years. There is nothing not to love about Asian noodles tossed with lots of garlic, butter, Parmesan cheese, with savory Asian sauces. It’s one of the most requested dishes on my dinner table!

I learned to make Garlic Noodles after I tried it out at the famous Vietnamese Thanh Long restaurant in San Francisco and Crustacean in Beverly Hills.

Both are sister restaurants and their main draws are roasted crab and garlic noodles, which are utterly delicious. I was instantly hooked and developed this easy homemade garlic noodles recipe.

For the best result, use Asian noodles such as yellow noodles from Asian stores. But pasta such as spaghetti or linguine works just fine. You can eat the garlic noodles plain or serve it with roasted crab (try my recipe!).

Ingredients:

  • 20 oz. yellow noodles or spaghetti
  • 1 tablespoon bottled grated Parmesan cheese
  • water (for boiling the noodles)
  • 1 stick unsalted butter
  • 2 tablespoons minced garlic or more to taste
  • 1 tablespoon Maggie seasoning sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar

Instruction:

  1. Rinse the yellow noodles with running water to discard the oil from the noodles. Drain and set aside.
  2. Heat up a pot of water until boiling. Add the noodles into the boiling water and cook the noodles until al dente (you want it to still have a good chewy bite), or for a few minutes. You can taste the texture of the noodles while cooking. Do not overcook as the noodles will turn soggy. Transfer the noodles out and drain dry.
  3. Prepare the Garlic Sauce using a saute pan on medium to low heat. Add the butter into the pan and when it melts, add the garlic and saute until aromatic but not browned. Add all the seasonings into the pan, stir to combine well. Transfer the garlic sauce into a small bowl.
  4. To serve, just toss all the noodles with the garlic sauce. Add the Parmesan cheese, toss to combine well. Serve immediately.

This quick and easy Asian garlic noodles recipe takes just 20 minutes to make. The combo of soy sauce, oyster sauce, butter, and parmesan is an umami blast!

Ingredients:

  • 12 ounces thin spaghetti ((340g; can also use dried Chinese noodles or fresh egg noodles))
  • salt
  • 4 tablespoons unsalted butter
  • 8 cloves garlic ((peeled and thinly sliced))
  • 1/8 teaspoon turmeric ((optional))
  • 1 tablespoon oyster sauce ((or vegetarian oyster sauce))
  • 1 tablespoon soy sauce
  • 1-2 teaspoons brown sugar ((depending on your taste))
  • 1 teaspoon sesame oil
  • 1-2 whole scallions ((chopped))
  • 1/4 cup Parmesan cheese

Instruction:

  1. Bring a large pot of salted water to a boil. Cook the noodles/pasta according to package instructions. If using fresh noodles, you may simply need to blanch them. (Reserve some of the pasta cooking water, as you may need it in the sauce later.)
  2. Meanwhile, heat the butter in a large skillet over medium heat and add the garlic. Cook for 5 minutes, until lightly caramelized, and stir in the turmeric (if using), oyster sauce, soy sauce, brown sugar, and sesame oil. Stir for 1 minute and add the scallions.
  3. After 30 seconds, to let the scallions wilt, toss in the cooked pasta and parmesan cheese. If the sauce is too thick, add a few tablespoons of the noodle cooking water to loosen them up. Serve!

Crazy Good Quick Garlic Noodles

Ingredients:

  • 3 tablespoons butter + 1 tablespoon olive oil
  • 6-8 fresh garlic cloves, minced (we always use 8)
  • 2 scallions, greens only (thinly sliced)
  • 1-2 tablespoons fish sauce
  • 1-2 tablespoons oyster sauce
  • 1 tablespoon granulated sugar
  • 1/4 cup shredded parmesan cheese
  • 8 ounces noodles (see notes)
  • fried garlic, for topping

Instruction:

  1. Infuse the Butter: Heat a large pot with water and allow it to come to boil, cook the noodles according to package directions, drain and set aside. While the water is boiling, grab a large, non-stick skillet and place it on medium-low heat. Add the butter, oil olive, garlic, and scallions. Let the butter infuse with the garlic for 5-7 minutes, stirring often. The garlic should barely sizzle here, you don’t want it to brown.
  2. Garlic Noodles: While the garlic is going, grab a small bowl and mix together the fish sauce, oyster sauce, and the sugar. When the garlic is cooked, kick the heat up to medium-high, stir in the prepared sauce; let cook for 30 seconds. Add the prepared noodles and toss with parmesan cheese (yes, parm!) Let the noodles cook for a minute so they soak up all that flavor. Top with fried garlic and serve immediately! That flavor is like NOTHING you’ll ever have.
