You can throw these baked nachos together with a variety of different ingredients, and you really don’t even need to measure. This is one of those dishes that you don’t have to worry about getting the measurements just right.

They are perfect to whip up while chatting with friends, entertaining or watching a game. Nachos can really be a throw it all together and enjoy type of thing. When I’m entertaining, I love those type of recipes.

When entertaining friends and family, especially when entertaining or watching a big game, if you are like me you want to keep it simple. Nachos can really be a “throw it all together and enjoy” type of thing. When I’m entertaining, I love those type of recipes.

I get easily distracted and side tracked, so complicated recipes are a no-go if I’m trying to make something while interacting. This is such a great option to throw together quickly and easily while hanging out with your guests. They can even help out.

Sometimes we get so focused on creating the perfect meal when entertaining, that we get more wrapped up in that than spending quality time with our guests.

  • 2 lb. ground beef
  • 1/2 tsp. chili powder
  • 1/2 tsp. paprika
  • 1/2 tsp. cumin
  • 1/4 tsp. crushed red pepper
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 can (14.5-ounce) pinto beans, chili beans, or ranch style beans
  • 1/2 c. hot water
  • 6 whole Roma tomatoes, diced
  • 1 whole jalapeño, diced finely
  • 1/2 bunch cilantro leaves, chopped
  • Juice of 1 lime
  • 1/2 tsp. salt
  • Tortilla chips
  • 1 1/2 c. grated cheddar cheese
  • 1 1/2 c. Monterey Jack cheese
  • 1 whole avocado, pitted and diced
  • Sour cream (optional)

Instruction:

  1. In a skillet over medium-high heat, add the olive oil and half the diced onion. Cook it until starting to soften, then add the ground beef. Cook the meat until it’s totally browned, then drain the fat. Add the chili powder, paprika, cumin, crushed red pepper, salt, and pepper and stir to combine. Add the beans and hot water and stir. Reduce the heat to low and simmer while you prepare the other ingredients.
  2. To make the pico de gallo, combine the other half of the diced onion with the tomato, jalapeño, cilantro, lime juice, and 1/2 teaspoon salt. Stir it together and set it aside.
  3. To build the nachos, place a layer of tortilla chips on a platter or plate. Top with a layer of the beef/bean mixture, then all but 1/4 cup of the cheddar cheese. Add another layer of chips, another layer of the beef/bean mixture, and the Monterey Jack cheese. Add a final small layer of chips, then a small layer of beef and beans, then a final sprinkling of cheddar.
  4. Microwave in 45 second increments until the cheese is melted and bubbly. (You may also place the platter into a 325˚ oven if it’s heatproof. Just leave it in until the cheese is melted.)
  5. Immediately sprinkle on the diced avocado and plenty of pico de gallo. Optional: Add dollops of sour cream here and there. Serve immediately!

FAQ

What do you put on nachos?

The best toppings for nachos.

If you want to stick with the traditional Mexican vibe, we recommend guacamole, pico de gallo, shredded lettuce, cotija cheese, grilled corn, pinto beans, black olives, pickled red onions, shredded chicken, or crumbled tofu.

What is the correct way to layer nachos?

Don’t overcrowd your nachos. Build them on a cookie tray in layers–first tortilla chips, then grated cheese, followed by a two or three minutes in a very hot oven to quickly melt the cheese on the first layer. Then take it out of the oven and repeat with more layers. Never used canned, pre-sliced black olives.

What real cheese is best for nachos?

A Monterey Jack cheese will have the oozy-melty quality sought after in the best nachos, while a standard sharp cheddar will offer a little tang.

What is the secret to crispy nachos?

* To prevent the chips from getting soggy, sprinkle grated or crumbled cheese on top and bake them in the oven for a few minutes. When melted, the cheese will act as a buffer between the chips and toppings.

Do you put cheese or salsa on nachos first?

Spread tortilla chips in a single layer onto a baking sheet, and spoon about 1 teaspoon of the tomato salsa onto each chip. Spread 1 cup of Cheddar cheese over the nachos, top the chips with another teaspoon or so of salsa, and top with the remaining 1 cup of cheese.

What is the best melting cheese for homemade nachos?

Young cheddar, or mild cheddar, works best for nachos because it has a smooth, creamy, butter-like consistency, so it will melt well to make the sauce. Cheddar also offers a nice, sweet flavor that many nacho lovers fancy to complement those perfectly salted tortilla chips.
