Yellow rice is basically white rice that is colored by the spices turmeric or saffron when prepared. This yellow rice recipe calls for turmeric, but you could easily substitute saffron and achieve the same bright yellow color and a slightly tangy flavor. Ingredients:

  • 3 tablespoons butter
  • 1 cup long-grain white rice
  • 1 teaspoon fresh minced garlic
  • 1 teaspoon onion powder (or dried minced onion)
  • 1 teaspoon ground turmeric
  • 2 cups chicken broth
  • 1/2 teaspoon Kosher salt (or to taste)
  • ground black pepper (to taste)
  • 2-3 tablespoons fresh cilantro (chopped)

Instruction:

  1. Heat butter in a large saucepan over medium heat. Add the rice and gently stir until rice begins to lightly brown.
  2. Add garlic, onion powder, and turmeric and stir until well mixed in.
  3. Slowly stir in chicken broth and raise heat to medium-high. Add salt and pepper to taste. Bring the mix to a boil then turn the heat to low and cover the pan with a lid. Simmer for 20 to 25 minutes.
  4. Remove from heat, add cilantro, and fluff with a fork. Serves 4.

Ingredients:

  • 1/4 c unsalted butter ((1/2 stick))
  • 2 c long grain rice
  • 2 tbsp red or green bell peppers (or both) (minced)
  • 2 cloves minced garlic
  • 1 tsp salt
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp chili powder
  • pinch red pepper flakes
  • 4 c low sodium chicken broth
  • 2 stems cilantro

Instruction:

  1. In a medium saucepan set over medium heat, add the butter. Once melted, add the rice and cook for 1 minute. Add the bell pepper and garlic, cook for 2 additional minutes
  2. Add salt, turmeric, garlic powder, paprika, chili powder, red pepper flakes, chicken broth and cilantro stems. Turn heat up and bring to a boil. Then reduce heat to low.
  3. Add lid and simmer for 15-18 minutes or until the rice is fully cooked. Remove from the heat and let sit, with the lid on for 10 minutes. Remove cilantro stems, then fluff with a fork.

Ingredients:

  • 2 cups uncooked long grain rice
  • 4 teaspoon olive oil
  • 1 large chicken or veggie bouillon cube (such as knorrs or maggi)
  • 5 medium scallions (chopped)
  • 2 garlic cloves (minced)
  • 1 medium tomato (diced)
  • 1/2 cup chopped cilantro
  • 4 cups water
  • 1 packet Badia Sazon seasoning*
  • 1 teaspoon kosher salt (or more to taste)

Instruction:

  1. In a medium heavy pot with a tight fitting lid, heat oil on medium heat and saute scallions, cilantro and garlic for about 2 minutes, until tender,
  2. Add the tomatoes and saute another minute, until they get soft.
  3. Add rice and saute 2 minutes longer, stirring frequently.
  4. Add water, bouillon cube, sazón plus 1 teaspoon salt.
  5. Taste 4 cups water and taste for salt, it should be flavorful and salty enough, adjust as needed.
  6. Let the water boil on a high heat stirring once at this point.
  7. As the water boils down and just barely skims the top of the rice, reduce heat to very low and cover 15 minutes.
  8. The steam will cook the rice so do not open the lid.
  9. After 15 minutes, shut the flame off and let it sit at least 5 more minutes without touching the lid.
  10. The steam will finish cooking the rice without burning the bottom. Then fluff with a fork and enjoy.

Easy Homemade Yellow Spanish Rice

Instruction:

  1. Bring a medium size pot to medium high heat and add oil. When hot, add onions and carrots and cook ~ 4-5 minutes at a lower heat or until veggies are soft and translucent.
  2. Stir in ground turmeric to the mixture.
  3. Add rice and stir to coat.
  4. Add broth or water after the rice is coated with the oil/spice mixture.
  5. Bring rice to a boil, reduce heat to medium-low and cook covered ~ 20 minutes (or according to package instructions). Don’t stir rice during this process. Just let it do it’s thing undisturbed.
  6. Remove rice from heat and add peas (after rice is cooked) and keep rice covered to steam them ~ 8 minutes (this keeps their vibrant color).
  7. Remove lid and fluff yellow rice before serving.
