Ingredients:

  • 1 tbsp. extra-virgin olive oil
  • 4 boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp. dried oregano
  • 3 tbsp. butter
  • 3 cloves garlic, minced
  • 1 1/2 c. cherry tomatoes, halved
  • 3 c. baby spinach
  • 1/2 c. heavy cream
  • 1/4 c. freshly grated Parmesan
  • Lemon wedges, for serving

Instruction:

  1. In a skillet over medium heat, heat oil. Add chicken and season with salt, pepper, and oregano. Cook until golden and no longer pink, 8 minutes per side. Remove from skillet and set aside.
  2. In the same skillet over medium heat, melt butter. Stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt.
  3. Stir in heavy cream and parmesan and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes. Return chicken to skillet and cook until heated through, 5 to 7 minutes.
  4. Serve with lemon wedges.

Ingredients:

  • 2 large chicken breasts (halved (1 1/2 lbs))
  • 1 tsp fine sea salt (divided, plus more to taste)
  • 1/2 tsp freshly ground black pepper (divided)
  • 1/2 tsp garlic powder
  • 2 Tbsp light olive oil (divided)
  • 1 Tbsp unsalted butter
  • 8 oz brown mushrooms (thickly sliced)

Add chicken to the hot skillet and sauté 3-5 minutes per side, or until cooked through to a safe internal temperature of 165 ̊F on an instant-read thermometer.
  2. Remove chicken from the pan and transfer to a cutting board to cool then slice chicken if desired.
  3. In the same pan over medium heat, add 1 Tbsp oil and sliced mushrooms, and sauté 5-7 minutes, stirring occasionally until lightly golden and excess liquid has evaporated. Add chopped sun-dried tomatoes, green onion, minced garlic 1/2 tsp salt and 1/4 tsp black pepper. Sauté another 1 minute or until garlic is fragrant.
  4. Stir in cream and sprinkle 1/2 cup parmesan cheese over the top. Bring to a light boil, stirring frequently then reduce heat and simmer (2 minutes) until sauce is slightly thickened. Season sauce to taste with salt and pepper.
  5. Add spinach and stir just until wilted. Add chicken back to the pan, and spoon warm sauce over it then remove from heat. Garnish with chives if desired.
